For those who are new on the mailing list, Edale is a 1,000 acre cattle farm in the Hunter Valley that produces high quality grass finished Galloway beef.

They also now cut-up and pack the beef on the farm in their new HACCP food authority approved butcher shop by a fully qualified butcher.

As a guide the table below shows the basic cut-up for 10kgs.  If you have special requests let them know.  To keep things fair the bodies are evenly split.  It can be difficult to do this as all cuts are not even.  We therefore show some options.
